Q: Are you originally from this area? If not, where from?
A: I grew up in Norway (yes, where Frozen takes place...sort of) and moved to Florida about 7 years ago for college. As you can imagine, I wanted to leave winter behind me and live somewhere warm so I figured Florida would be perfect! I moved to Lakeland a few months ago from Sarasota with my husband, Tim, and our golden doodle pup Kyra.
Q: What do you do?
A :I am an Integrative Nutrition Health Coach and last year I started my own health coaching business called The Green Spatula (www.thegreenspatula.com). I help people create healthier relationships with food so they can increase their confidence, lose weight, and nourish their bodies without guilt or bland recipes. My business is all online so I conduct clients sessions over the phone or Skype/FaceTime.
Q: What do you like most about your job/profession?
A: I love my job because everyday is different! I speak with clients, write and research blog post, style and shoot food/lifestyle photos for my Instagram account, answer emails, develop new recipes, and conduct free health consultations for potential clients. I get to flex my creativity muscle while helping support clients while they work towards their health and wellness goals, which is beyond rewarding! I never thrived in a traditional 9-5 desk job so I am thrilled that I have created a business that ignites my passion and helps others. Also, being a female entrepreneur has been incredibly empowering and something I never thought I could accomplish (I majored in art history in college and always thought I would end up working in a museum).
Q: What are some of your hobbies?
A: Can food be considered a hobby? Because I love to cook, eat, and create new recipes that are super delicious and fuel the body with healthy ingredients (I have the most delicious recipe for chocolate cake made from sweet potato on my blog). My other hobbies include yoga, going to the beach, visiting Disney with my husband (fun fact: I work as a Disney Imagineer for two years in college), walking around Lake Hollingsworth with Kyra, and styling food pictures.
Q: What’s your involvement in the community?
A: We just moved to Lakeland so I am still getting to know the area but I am hoping that by becoming a member of EMERGE, I can connect with my new neighbors at events and create new friendships.
Q: If someone sees you at an EMERGE event, what are some topics they should ask you about to get the conversation going?
A: Let's bond over food and pictures of your dog because those are wonderful ice breaking in my opinion. I'm new to the area so I am always looking for new restaurant recommendations. Besides those, I love chatting about movies/tv shows (Parks and Rec, Psych, Stranger Things, The Mummy). Come and say hi!
Q: What do you like most about Lakeland?
A: The amount of beautiful outdoor spaces to walk around and the overall community feel that this town has established. There always seems to be an event or something to do downtown, which has made getting to know Lakeland really fun!
Q: Why did you join EMERGE Lakeland?
A: Since I work from home, I wanted to join to establish more connections with other members of the community. I figured EMERGE would be a great way to meet new people and get involved with the community.
